Ribeye steaks are a true delicacy, beloved by steak lovers for their rich, beefy flavor and melt-in-your-mouth tenderness. The generous marbling throughout the meat melts during cooking, basting the steak from within and resulting in a juicy, flavorful experience that satisfies even the pickiest eaters.

Grilling the perfect ribeye may seem intimidating, but with the right techniques and simple ingredients, you can create restaurant quality steaks at home. By using a combination of indirect heat for cooking and a high heat sear, you can grill the perfect ribeye steak. Ribeye Selection Tips

Choosing a high quality cut is essential when it comes to grilling the perfect ribeye steak. Not all ribeyes are created equal, and selecting the right steak can make all the difference in the final result. Here are a few tips for selecting the best ribeyes:

  • Color. Select steaks with a bright red color and no signs of discoloration. The meat should look fresh and appealing, with no gray or brown spots that could indicate age or poor handling.
  • Marbling. Look for steaks with generous marbling throughout the meat. The more marbling, the more flavor and tenderness you can expect from your steak.
  • Thickness. The thicker the steak, the better when it comes to ribeye. Thinner steaks are more likely to overcook and become dry, while thicker steaks allow for a nice sear on the outside while remaining juicy and tender on the inside.
  • Spinalis. Look for ribeyes with a generous spinalis muscle, also known as the ribeye cap. The crescent shaped muscle located on the outer edge of the ribeye contains incredible beefy flavor.

Steak Seasoning Ingredients

A great steak seasoning enhances the natural flavors of the ribeye without overpowering it. I came up with this blend to perfectly highlight the natural richness of the ribeye and bring out the savory beef flavor. Here’s what you’ll need:

  • 2 teaspoons black pepper
  • 2 teaspoons Kosher salt
  • 1 teaspoon ground coriander
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper

How Long to Grill Ribeye Steak

We’ll be cooking our steaks in two stages using the two-zone grilling method, for a total of around 45 minutes. First, we’ll grill our steaks with the lid closed over indirect heat for around 40 minutes, flipping once in between. This gives your ribeyes time absorb the smoke and become super tender. Then, we’ll move our steaks over direct to give them a final sear on both sides to get that delicious, crispy bark.

The cooking time for your ribeye steaks will also depend on their thickness and your desired level of doneness. Thicker steaks will require more time to cook through, while thinner steaks will cook more quickly. It’s important to use a reliable meat thermometer (like my Thermapen ONE) to ensure your steaks are cooked to perfection. Here are the target internal temperatures for various levels of doneness:

  • Rare: 125 degrees F
  • Medium Rare: 135 degrees F
  • Medium: 145 degrees F
  • Medium Well: 155 degrees F
  • Well Done: 160 degrees F

How to Make Perfect Ribeye Steak

Alright, here are the simple steps for perfect ribeye steak:

  1. Rest steaks. Remove your steaks from the refrigerator and allow them to sit at room temperature for around 30 minutes while you preheat your grill to 350 degrees F for two-zone grilling. I’m doing these on my Weber 22” Charcoal Grill, but you can set most grills up for two-zone grilling. This will help the steaks cook evenly and develop a crust.
  2. Make seasoning. Combine all ingredients for the steak seasoning in a small bowl, and then mix with a fork to combine and avoid any clumping. Next, sprinkle the seasoning generously over both sides of the steaks, pressing it gently into the meat to help it adhere.
  3. Grill ribeyes. Once your grill has reached an overall temperature of 350 degrees F, place your ribeye steaks on the grill grates on the indirect head side of your grill. You’ll want to grill them for about 20 minutes with the lid closed, then flip them over and give them another 20 minutes with the lid closed. You want them about 10 degrees away from your desired temp so we can sear and rest them.
  4. Sear steaks. Next, it’s time to transfer your steaks to the direct heat side of your grill to sear for 2-3 minutes per side, or until the steaks reach your preferred target internal temperature. This will give the steaks a beautiful crust and enhance their flavor.
  5. Rest, serve, and enjoy. Finally, it’s time to remove the steaks to a serving platter and let them rest for 5-10 minutes before slicing and serving. This resting period is super important, as it allows all the juices to redistribute throughout the meat, resulting in a juicier, more flavorful steak.

  • 2 12-14 ounce ribeye steak

Simple Steak Seasoning

  • 1/2 teaspoon cayenne pepper

Instructions

  • Rest and season steaks. Take steaks out of refrigerator to rest on counter while you preheat your grill for two-zone grilling with an overall temperature of 350 degrees F. Combine all ingredients for the steak seasoning in a small bowl until well combined. Season the steaks on all sides with the steak rub.

    2 12-14 ounce ribeye steak, 2 teaspoons black pepper, 2 teaspoons Kosher salt, 1 teaspoon ground coriander, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon cayenne pepper

  • Grill ribeyes. Place steaks on grill grates over indirect heat, close lid, and cook for approximately 20 minutes, before flipping it for another 20 minutes, or until the steaks are 10 degrees away from your target temperature. (Rare = 115 degrees F, Medium Rare = 125, Medium = 135, Medium Well = 145, Well = 150 degrees F).

  • Sear ribeyes. Transfer your steaks to the direct heat side of your grill to sear for a 2-3 minutes per side, or until the steaks reach your preferred target internal temperature. (Rare = 125 degrees F, Medium Rare = 135, Medium = 145, Medium Well = 155, Well = 160 degrees F).

  • Rest, serve, and enjoy. Remove the steaks to the serving platter and rest for 5-10 minutes before slicing and serving.
