  • Green plantain: Start by choosing green, unripe plantains. They should be firm to the touch and not too soft or ripe. You can also use sweet, yellow plantain to make plantain chips, but the method used to get the chips crispy is beyond the scope of this recipe post.
  • Seasoning: All you really need is a little salt, and if you want a hint of chilli, add black pepper, cayenne pepper or chilli powder. But you don’t have to stop there. I’ve used paprika and other seasoning to add a bit of zest to my plantain chips.
  • Cooking oil: Any fry oil will do. I used grapeseed oil. Use cooking spray if you’re air frying or baking the plantain chips.

  1. Peel: Peel the plantains and slice them into round, even, thin slices. The thinner the slices, the quicker the chips will cook and crispier. Green plantains don’t peel as easily as ripe ones. A tip to make the task easier is to cut off the plantains’ ends, score down one of the plantain edges, flip the plantain around, and then attempt to peel.

  1. Add seasoning: You can add the seasoning now or later after making the plantain chips. However, if you’re using seasonings such as paprika like I did, it’s best to coat the plantain before cooking. If you’re only using salt, you can add it afterwards. Place the plantain slices in a bowl and add the seasoning. The plantain slices will stick together, so make sure to take them apart to coat all plantain slices on both sides. If you’re using an air-fryer or the oven to cook the plantain chips, also lightly coat the plantain slices with cooking spray.

  1. Fry: Though I choose to fry my plantain chips, you can air-fry or bake for a healthier option, as you will use less oil. Ensure the oil is hot before adding the plantain slices, about 350°F (175°C). Fry the plantain slices in batches until they turn golden brown and crispy, which should take about 2-3 minutes per batch. If you are air-frying the plantain chips, preheat your air fryer to 375°F (190°C). Cook for 8-10 minutes, flipping them halfway through or until they are crispy and golden brown.

  • 2 Green plantain
  • ½ tsp Salt
  • tsp Black pepper Optional
  • tsp Paprika Optional
  • Oil cooking spray for air frying or baking

Instructions

Frying the Plantain Chips

  • Peel the plantains and chop them into round, thin, even slices.

  • Sprinkle the seasoning over each plantain slice and coat well. You can also add this after frying.

  • Heat enough oil (so that the plantain pieces are swimming in it) in a deep frying pan or skillet to 350°F (175°C).

  • In batches, fry the plantain chips until golden brown, which should take about 2-3 minutes per batch.

  • Remove the chips with a slotted spoon and place them on a paper towel to remove excess oil. (If you didn't before, make sure to add the salt immediately)

Air Frying the Plantain Chips

  • Preheat your air fryer to 375°F (190°C).

  • Lightly coat the plantain slices with cooking spray and arrange them in a single layer in the air fryer basket.

  • Cook for 8-10 minutes, flipping them halfway through, or until they are crispy and golden brown.

  • Season with salt immediately after removing from the air fryer.

Notes

  • Though I add my seasoning before frying, there is also the option of adding it after.
  • Bake for about 15 to 20 at 150 °C
