Plantain chips are my new obsession. Tasty, easy to make, and healthy, these chips make a perfect snack for grown-ups and kids. I’ll teach you how to make them, and I am sure you are going to fall in love with plantain chips, too!

What is a Plantain

Plantain is a member of the banana family, but it is starchier and lower in sugar. It is bigger than a banana, has much thicker skin, and is usually consumed when still green. Although it is a fruit, because of the low sugar and high starch content, the plantain is treated as a vegetable. It can be baked, fried, roasted, and of course, turned into plantain chips!

Where to buy Plantains

Nowadays, plantains are sold in most grocery stores and large supermarkets. Most big chain food stores have them. They are usually located somewhere close to bananas, or root vegetables. I buy plantains from Walmart and Aldi.

What Kind of Plantain is Best for Plantain Chips

Plantains can be consumed both green (must be cooked) and fully ripe (can be eaten raw). For plantain chips, it is best to use green ones that are just about to start turning yellow. If you use very green plantains, they will be very hard to peel and will have very little sweetness. But when the plantain just starts turning yellow, it still has enough starch to create crispy chips, but also offers a bit of sweetness. When mixed with spices, or just sea salt, this sweetness adds extra flavor to the chips. Check the photo below to help you pick the best plantains for your chips.

Ingredients

  • green plantains
  • curry powder
  • paprika
  • salt
  • grapeseed or avocado oil

How to Make Plantain Chips

1. Preheat the oven to 350 °F.

2. Wash and peel the plantains. Cut them into very thin slices using a mandoline or a sharp knife. Place the slices into a medium mixing bowl.

3. In a small bowl or ramekin, mix together the curry powder, paprika, salt, and grapeseed oil.

4. Pour the spice-oil mixture onto the plantain slices. Using your hands, gently mix it together, breaking the stuck slices apart.

5. Arrange the plantain slices onto a large (about 12×17 inches), non-stick baking sheet, and bake for 20 minutes.

Helpful Tips & Tricks

Use a Mandoline.While it is certainly possible to slice plantains with a knife, a mandoline is the way to go! Not only is it harder and takes longer to cut with a knife, but you won’t be able to get even slices, which makes the chips bake unevenly. Use the lowest setting on your mandoline slicer for the best results. You can find one at almost any large supermarket, orbuy a mandoline from Amazon.

Use high-quality oil.I recommend using grapeseed or avocado oil for the best results. Both oils have a neutral flavor and make great chips.

Change spices.You can switch up the spices to make things more interesting when you get tired of the curry-paprika combo. You can just use oil and sea salt, or your favorite seasoning (Cajun, Berbere, Barbecue, etc.)

Make a dipping sauce.If you are feeling adventurous, make a dipping sauce for your chips. I especially love dipping them in Guacamole orTzatziki.

How to Store Plantain Chips

Store the chips in a resealable sandwich bag. This is a good option if you plan to take the chips with you as a snack or pack them in a lunch within the next few days. The chips should stay fresh for about 7 days when stored this way.

Are Plantain Chips Healthy?

Homemade plantain chips have much less oil, calories, and sodium when compared to store-bought ones. A small serving of plantain chips can definitely be a part of a healthy diet.
