Why We Love These

Plantains (also known as platanos) are a way of life in Puerto Rican cuisine. We eat them as a snack, side dish, main component in entrees, sweet treat, you name it!

Many of my favorite recipes, like this Pastelón (Baked Plantain Lasagna) and Jibarito (Plantain Sandwich), include the popular ingredient.

Their ability to be both sweet & soft (when brown and ripe) or savory & crisp (when green), makes them an incredibly versatile ingredient that’s perfect for making into chips.

These baked plantain chips are light & crispy, and easy to coat with just about any of your favorite seasonings. They come together in under a half hour with simple ingredients, and make an easy and delicious snack or appetizer served with dipping sauces (like this cilantro lime sauce) or a simple salsa.

Seasoning Options

This recipe is easy to make your own with whatever spices and seasonings you enjoy. I recommend tossing chips in the seasoning of your choice when they are fresh out of the oven, to get things to coat evenly.

Here are some fun ideas:

  • Sazon and/or Adobo – Add a teaspoon of sazon and/or adobo to add some Puerto Rican flavor to your chips!
  • Tajin – A teaspoon or two or Tajin adds an fun spicy & sour flavor that’s totally addicting.
  • Sweet – If you’re into a sweeter chip, you can add a light dusting of cinnamon & sugar to your plantains.

Picking the Right Plantains

As mentioned above, the type of plantain you pick will have a significant impact on the end result.

If you want savory chips, it’s important to select a green or yellow plantain from the store.

The brown plantains are delicious, but will result in a sweeter, less crispy chip. If you end up with leftover brown plantains, try making maduros (sweet fried plantains)!

Fried vs. Baked

While this recipe focuses on baked plantain chips, it’s just as easy to fry these!

Here’s how to do it:

  • Peel & slice the plantains as instructed in this recipe
  • Heat your (canola or vegetable) oil to 350 degrees Fahrenheit / 177 degrees Celcius
  • Fry until golden brown and crispy, about 5 minutes
  • Toss with salt (or whatever seasonings you like)

Equipment & Special Tools

The most important tool you will need is a sharp knife.

If you own/like to use a mandolin, feel free to do so. Just make sure to be careful as they are extremely sharp. A mandolin is helpful in creating uniform chips that cook evenly.

You will also need parchment paper & a large sheet pan to bake these in the oven. The parchment paper helps to prevent the plantain chips from sticking the pan.

Storage

These baked plantain chips are best served fresh, but will keep for up to 5 days when stored properly.

Store any leftovers in an air tight bag or container, with paper towels separating layers to keep them crisp.

Description

Ingredients

  • 2 plantains (green or yellow)
  • 2 tbsp oil (can be olive, avocado, etc.)
  • 1 tsp salt

Instructions

  1. Peel the plantains. Start by trimming the ends off of both plantains. Slice through the peel lengthwise, just deep enough to wedge your knife (or nails) under the peel. Pull the peel back to remove completely.
  2. Slice the plantains. Using a sharp knife, slice the plantains into 1/8 inch thick slices.
  3. Preheat the oven & prep a pan. Preheat the oven to 350 degrees Fahrenheit / 177 degrees Celcius. Line a sheet pan with parchment paper.
  4. Season the plantains. Toss the plantains in a bowl with oil and salt until evenly coated. Spread them out on the parchment lined pan, making sure they don’t overlap.
  5. Bake until golden & crispy. Transfer the pan to the oven and bake for 15-20 minutes, or until they are golden and crispy. Note that they will continue to firm up while cooling. Enjoy!
